When training to become a Jedi the padwan is given a chance to go to a given location and pick their own saber crystal.. the force will lead them to the crystal which is for them. The color of a Jedi's saber is because of that crystal.. once placed in the saber and ignited the padawan will see what color they have chosen. Each color represents a personality..
